Ingredients:
- 8 oz rice noodles
- 2 tbsp vegetable oil
- 2 garlic cloves, minced
- 2 eggs, lightly beaten
- 1/2 lb chicken or shrimp, cooked and sliced
- 2 cups bean sprouts
- 3 green onions, thinly sliced
- 1/4 cup chopped peanuts
- Lime wedges
For the sauce:
- 3 tbsp tamarind paste
- 2 tbsp fish sauce
- 2 tbsp brown sugar
- 1 tbsp soy sauce
- 1/4 tsp cayenne pepper
Instructions:
- Soak the rice noodles in hot water for 20-30 minutes until they soften, then drain and set aside.
- In a small bowl, mix together the tamarind paste, fish sauce, brown sugar, soy sauce, and cayenne pepper to make the sauce. Set aside.
- Heat the oil in a wok or large skillet over medium-high heat. Add the garlic and cook until fragrant, about 30 seconds.
- Push the garlic to the side of the wok and pour the beaten eggs into the center. Scramble the eggs until cooked through, then mix with the garlic.
- Add the cooked chicken or shrimp to the wok and stir-fry for 1-2 minutes until heated through.
- Add the drained rice noodles to the wok and stir-fry for 2-3 minutes until tender.
- Pour the sauce over the noodles and stir-fry for another 1-2 minutes until the noodles are evenly coated.
- Add the bean sprouts and green onions to the wok and stir-fry for another 1-2 minutes until heated through.
- Serve the Thai noodles hot, garnished with chopped peanuts and lime wedges on the side for squeezing over the top.
