Pad Thai ( Thai noodles)

Thai noodles, also known as pad Thai, are a popular and flavorful dish in Thai cuisine. Here is a simple recipe for making Thai noodles:

Ingredients:

  • 8 oz rice noodles
  • 2 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 2 eggs, lightly beaten
  • 1/2 lb chicken or shrimp, cooked and sliced
  • 2 cups bean sprouts
  • 3 green onions, thinly sliced
  • 1/4 cup chopped peanuts
  • Lime wedges

For the sauce:

  • 3 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1/4 tsp cayenne pepper

Instructions:

  1. Soak the rice noodles in hot water for 20-30 minutes until they soften, then drain and set aside.
  2. In a small bowl, mix together the tamarind paste, fish sauce, brown sugar, soy sauce, and cayenne pepper to make the sauce. Set aside.
  3. Heat the oil in a wok or large skillet over medium-high heat. Add the garlic and cook until fragrant, about 30 seconds.
  4. Push the garlic to the side of the wok and pour the beaten eggs into the center. Scramble the eggs until cooked through, then mix with the garlic.
  5. Add the cooked chicken or shrimp to the wok and stir-fry for 1-2 minutes until heated through.
  6. Add the drained rice noodles to the wok and stir-fry for 2-3 minutes until tender.
  7. Pour the sauce over the noodles and stir-fry for another 1-2 minutes until the noodles are evenly coated.
  8. Add the bean sprouts and green onions to the wok and stir-fry for another 1-2 minutes until heated through.
  9. Serve the Thai noodles hot, garnished with chopped peanuts and lime wedges on the side for squeezing over the top.
